Each wheel has deep yellow golden interior complimented with a grainy brittle texture. The deep full-bodied tang is both sweet and nutty, the creamy taste has hints of hazelnuts with a citrus tang. Dry jack originated in the 1950s when there was a need for a shelf stable cheese, since access to refrigeration was limited. As the wheels age, the cheese texture becomes drier, giving it a texture similar to Parmesan. It is an excellent choice for grating over salads, pasta and soups, and a wonderful snack.
Each wheel spends four to eight months under our close care and supervision as it is washed, flipped weekly. We oil the wheels to help maintain moisture and to create a beautiful sheen on the rind.
This cheese could easily surpass Parmesan as your favorite grating cheese! It is perfect for grilling, snacking or in numerous Mexican style dishes. This dry jack is fabulous with of the California’s great reds or with a cool beer or cider.
